Wusthof Electric Knife Sharpener is best known as 3 stage sharpening system that provides RAZOR sharp edge to your knives. It has 3 separate rotating diamond wheels. The two slots are specifically meant for coarse sharpening whereas third slot is dedicated to polishing the knives.
The best feature of Wusthof Electric Knife Sharpener is that its 3rd fine strop comes with a built-in wheel dresser which is helpful to clean accumulated dirt & grease.
Wusthof Electric Knife Sharpener grabs my five stars rating because it is quite easy to use & simple to carry. As I have said earlier, it has 3 separate rotating diamond wheels in a spring loaded guide to help regulate pressure and to prevent scratching. You will have a great experience, if you are using this sharpener to sharpen your knives.
Let’s come to my favorite section where I define my experience of using a sharpener. You can set angle of sharpening according to your requirements. For kitchen knives, set angle of sharpening at 14 degrees whereas Japanese & Asian Knives needs 20 degrees sharpening angle.
The only thing which disappoints me is its 3 rubber feet. I found it a bit difficult to place this sharpener on the kitchen countertop. You can manage this flaw by placing a towel under the other corner to keep it from trembling during use.
Warning: Don’t press hard otherwise it might leave scratches on your knives during sharpening.
Note: Start sharpening system test with cheap knives and move forward to your favorite ones. Following the instructions manual is very important, it works as described.
Remember that, you need a little practice to learn how not to scratch the first slot (where knife first contacts the wheel) on the knife. In the first slot you must keep the knife moving – back to the front; not up-to-down to avoid scratching the blade.
The second slot is finer and less likely to extort, third is a stropping wheel for polishing a knife. Carefully reading the instruction sheet is very beneficial.
